At a time where our food choices are limited, the lockdown should not be a reason to eat boring lunch meals. I cooked brown rice with vegetables over the weekend for my family and they completely loved it! This recipe could be a little mood boost at a time like this and I felt the need to share it with you guys.

Ingredients
- 2 cups of basmati rice
- 2 red onions, finely chopped
- 2 tbsp of vegetable oil
- 4 cloves of garlic
- 2 medium carrots, cut into pieces
- 1 tsp of salt
- 1 tsp of masala powder
- ½ cups of frozen peas
- 1 handful of fresh parsley, finely chopped (optional)
- 2 ½ cups of boiled water
Instructions
- Fry the onions to a deep golden colour. Add half a cup of boiled water and let it simmer for 3 minutes. Then add the rice and two cups of boiled water, salt, let it cook till ready.
- Place water in a frying pan and cook the veggies (carrots and peas) for 15 minutes over high heat. Drain the veggies and set aside.
- Heat the oil in a saucepan and add garlic, masala powder, and parsley. Cook over high heat for about 2 minutes, stirring occasionally.
- Add the vegetables and rice. Cook for about 5 more minutes.
Tips
- Boil the peas first and keep them in the freezer to cook the following day
- You can use any choice of vegetables. This recipe is loaded with vegetables your children will be more willing to eat compared to when they’re cooked on their own.
